Black Bean Burgers

Black Bean Burgers

2 small yellow onions
1 pound fresh mushrooms
2 cups bread crumbs
2 cans black beans, drained not rinsed
2 teaspoons ground coriander
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
olive oil

1. Heat oven to 400 degrees, get out a baking sheet and put parchment paper on it.
2. Peel and chop onions, sauté in olive oil until nicely browned
3. Remove stems of mushrooms and discard, slice the tops; sauté in olive oil until nicely browned
4. Open black beans and drain liquid
5. Put cooked onions and mushrooms in food processor; pulse until nicely chopped.  Add black beans and pulse until combined.
6. Move beans, onions and mushrooms to a mixing bowl, and add bread crumbs, coriander, salt and pepper.
7. Form into burgers, brush with oilve oil, sprinkle with coriander.
8. Bake burgers for 35-45 minutes; let them rest for 5 minutes before serving.
