2 teaspoons grated lime zest
2 tablespoons fresh lime juice (about half a lime)
1 tablespoon vegetable oil
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup quinoa
1 (14 - 15 ounce) can black beans, rinsed and drained
1 (14 - 15 ounce) can diced tomatoes
4 scallions, chopped
1/4 cup fresh cilantro, chopped
1. In a small bowl, whisk together lime zest and juice, oil, sugar, salt, and pepper.
2. Prepare quinoa according to package instructions.
3. Add dressing to quinoa and toss until absorbed, then stir in black beans, tomatoes, scallions and cilantro.
